Lentils are a legume which are similar to beans, chickpeas and soybeans. There are different types of lentils, green, brown, red or yellow, and specialty lentils. For this dish use whatever lentils you have in your pantry.
To add body to this dish add plenty of your favorite vegetables. We recommend adding carrots, celery, bell peppers, onions and kale for the best flavor profile. When adding your vegetables and lentils make sure they’re in an equal amounts.
In addition to your legumes and vegetables, add some chicken to add a rich meaty taste to complete this meal. First brown your chicken in the pot so that you have a nice crispy skin. As your chicken browns it will create flavor and form brown bits on the bottom of the pot which are so tasty and will come up as you cook your other ingredients.

- 1 Beer optional
- 1.5 quarts Chicken Stock
- Lentils
- 1-2 Carrots chopped
- 2 Celery chopped
- 1 Bell peppers chopped
- 1.5 Onion chopped
- 1 head garlic minced
- 1 Tbsp Tomato Paste
- 3 stalks Kale (or other greens)
- 2 Bay Leaf
- 1 Tbsp Paprika
- 1.5 Tbsp Oregano
- olive oil for browning chicken
- 1 Chicken Breast skin on
- Heat your pot with a bit of oil, until oil is smoking
- Add chicken (skin down) to brown
- Once chicken is browned on skin side, remove and add all of your chopped veggies (EXCEPT Kale) & a scoop of tomato paste
- Cook veggies for a couple minutes to begin to caramelize.
- Add Lentils, paprika, thyme, bay leaf & stir
- Pour in beer
- Put Chicken back into pot & add chopped Kale
- Pour in enough Chicken Stock or Water to cover ingredients
- Cook on low simmer until lentils are just soft. (Don’t be afraid to add more liquid as the lentils absorb, if necessary)
- Adjust seasoning & add a splash of vinegar or a squeeze of orange
Typical ratio for Lentils to Veggies, should be 1:1, or equal parts
Other Flavor Options:
You could add diced squash, zucchini and/or sweet potato
For Coconut Curry Lentils take out beer & thyme and sub for curry powder & coconut milk
