For this recipe we suggest either using whole wheat or corn tortillas, flour tortilla work well too. A binding ingredient is anything that will hold your tortilla together this includes, mashed sweet potato, refried beans, mashed avocado or cheese. And finally, add whatever fillings you choose to create the perfect quesedilla!

Mix and Match Veggie Quesadillas are a great summer barbecue recipe. People can customize them however they like and can please any picky eater. They're a tasty way to add veggies into a meal.
Create your quesadilla, make sure each quesadilla you make has at least one binding ingredient this way your quesadilla doesn't unfold. This includes, mashed sweet potato, refried beans, mashed avocado or cheese.
Fold your quesadilla in half and gently press down, cook for about 2-3 minutes on each side.
Remove the quesadilla from the pan, slice it into wedges and serve!
Recipe Notes
All the toppings can be prepped ahead and stored in containers in the fridge except for the avocado mash. If you prepare to avocado to far ahead in time it will brown, you can add lemon juice to delay the browning.
